| The Sabine region was historically defined as being the western area of the province of Rieti, bordered by the Tiber and the Reatine plain, today it is recognised that its cultural and traditional identity extends beyond the actual geographical confines and refers instead to the entire territory covered by the province. The Sabine region is the soft hills used for growing olives in Farfa and Magliano Sabina, but is also the Reatine Valley with the River Velino, the magnificent peaks of Terminillo and the small villages that are well known for their cultural and gastronomic traditions. But the element that most characterises the province of Rieti is water. The rivers, springs and lakes, thanks to the abundance and purity of their water, play a determining role in characterising the landscape but also the culture of the territory, which for thousands or years has fed the city of Rome via a system of monumental aqueducts.
